  • 2 tablespoons garlic paste
  • 1 lemon, juiced and zested
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Rub chicken cutlets with olive oil and season with salt and pepper.
  2. Grill over medium-high heat, flipping once, until cooked through (165°F internal temperature). Set aside to rest.
  3. In a large bowl, combine arugula, halved tomatoes, grated carrot, beets, and goat cheese.
  4. Slice grilled chicken and layer over salad. Garnish with parsley if desired.
