Grilled Pineapple is a sweet and smoky treat, perfectly enhanced with a rich marinade of butter, brown sugar, cinnamon, and vanilla. This simple yet indulgent dessert is ideal for summer cookouts and is irresistible when served with a scoop of ice cream!

  • Total Time: 22 minutes
  • Yield: 6 servings

Ingredients

  • 1 fresh pineapple
  • ¼ cup butter, melted
  • ¼ cup dark brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prepare the Pineapple:
  2. Use a sharp knife to cut off the top and bottom of the pineapple, then remove the rind.
  3. Slice the pineapple into ¾-1 inch spears or rings. Use a small cutter to remove the core from the rings.
  4. Place the cut pineapple into a large zip-top bag and set aside.
  5. Make the Marinade:
  6. In a small bowl, whisk together the melted butter, brown sugar, vanilla, cinnamon, and a pinch of salt until well combined.
  7. Marinate the Pineapple:
  8. Add the marinade to the pineapple in the zip-top bag and gently toss to coat the fruit.
  9. Place the bag in the fridge for 20-30 minutes to let the pineapple marinate.
  10. Grill the Pineapple:
  11. Preheat the grill or grill pan to 375-400°F (medium heat).
  12. Place the marinated pineapple on the grill and cook for 4-6 minutes per side, brushing with the excess marinade as it cooks.
  13. Serve:
  14. Transfer the grilled pineapple to a platter and serve immediately. For an extra indulgence, serve with a scoop of ice cream!

Notes

  • You can also add a sprinkle of toasted coconut or a drizzle of caramel sauce for extra flavor.
  • For a smoky touch, consider grilling the pineapple with a little bit of brown sugar sprinkled on top.
  • This recipe also works well with other fruits like peaches or mango for a mixed fruit grill.
