Ingredients

  • 1 lb ground beef
  • 1 cup onion, diced
  • 1 tsp chili powder
  • 1 tsp garlic salt
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 10 oz enchilada sauce
  • 1 cup salsa
  • 14 oz black beans, rinsed and drained
  • 8 small corn tortillas, chopped
  • 1 1/2 cups Mexican 3 cheese blend

Instructions

  1. Brown and crumble the ground beef along with the diced onion in a large skillet over medium-high heat. Once the beef is no longer pink, drain any excess fat and return the skillet to the heat.
  2. Add the chili powder, garlic salt, cumin, and oregano to the skillet, stirring for about 30 seconds until fragrant.
  3. Pour in the enchilada sauce, salsa, and black beans. Bring the mixture to a simmer.
  4. Stir in the chopped corn tortillas, allowing them to soak up some of the enchilada sauce.
  5. Once everything is heated through, sprinkle the shredded cheese on top. Cover the skillet with a lid and let the cheese melt.
  6. Serve with your favorite taco toppings and enjoy!
