Ingredients
- 1 lb ground beef
- 1 cup onion, diced
- 1 tsp chili powder
- 1 tsp garlic salt
- 1 tsp cumin
- 1/2 tsp oregano
- 10 oz enchilada sauce
- 1 cup salsa
- 14 oz black beans, rinsed and drained
- 8 small corn tortillas, chopped
- 1 1/2 cups Mexican 3 cheese blend
Instructions
- Brown and crumble the ground beef along with the diced onion in a large skillet over medium-high heat. Once the beef is no longer pink, drain any excess fat and return the skillet to the heat.
- Add the chili powder, garlic salt, cumin, and oregano to the skillet, stirring for about 30 seconds until fragrant.
- Pour in the enchilada sauce, salsa, and black beans. Bring the mixture to a simmer.
- Stir in the chopped corn tortillas, allowing them to soak up some of the enchilada sauce.
- Once everything is heated through, sprinkle the shredded cheese on top. Cover the skillet with a lid and let the cheese melt.
- Serve with your favorite taco toppings and enjoy!
Notes
- For extra flavor, you can add diced bell peppers or jalapeños to the skillet when cooking the beef.
- If you want a spicier casserole, try using a spicy salsa or adding a pinch of cayenne pepper.
