Savory, high-protein egg bites made with turkey sausage, spinach, and cottage cheese—perfect for meal prep and on-the-go breakfasts.

Ingredients

  • 12 fully cooked turkey sausage links, chopped
  • 4 large eggs
  • 1/2 cup egg whites
  • 1 cup 2% cottage cheese
  • 1/2 cup shredded cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 oz baby spinach

Instructions

  1. Preheat oven to 400°F (200°C). Spray a muffin tin with non-stick spray.
  2. Evenly divide chopped turkey sausage between 12 muffin cups.
  3. In a blender, combine eggs, egg whites, cottage cheese, 1/4 cup cheddar cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
  4. Add baby spinach and pulse a few times to chop into the mixture.
  5. Pour egg mixture into muffin cups, filling about 3/4 full.
  6. Sprinkle remaining cheddar cheese on top of each cup.
  7. Bake for 12–15 minutes, until egg bites are puffed and set.
  8. Let cool slightly before removing from the pan. Once fully cooled, store in the refrigerator for up to 7 days.
