Ingredients
- 12 fully cooked turkey sausage links, chopped
- 4 large eggs
- 1/2 cup egg whites
- 1 cup 2% cottage cheese
- 1/2 cup shredded cheddar cheese, divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 oz baby spinach
Instructions
- Preheat oven to 400°F (200°C). Spray a muffin tin with non-stick spray.
- Evenly divide chopped turkey sausage between 12 muffin cups.
- In a blender, combine eggs, egg whites, cottage cheese, 1/4 cup cheddar cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
- Add baby spinach and pulse a few times to chop into the mixture.
- Pour egg mixture into muffin cups, filling about 3/4 full.
- Sprinkle remaining cheddar cheese on top of each cup.
- Bake for 12–15 minutes, until egg bites are puffed and set.
- Let cool slightly before removing from the pan. Once fully cooled, store in the refrigerator for up to 7 days.

- These freeze well—just reheat in the microwave for 30–60 seconds before serving.
- Substitute chopped veggies or other lean meats for variety.
- Blend mixture thoroughly for a light and fluffy texture.
