Ingredients

Dry Ingredients

  • 3 cups (330g) rolled oats
  • 2/3 cup (45g) unsweetened shredded coconut
  • 1/4 cup (30g) tapioca flour (or protein powder alternative)
  • 1/2 tsp salt
  • 1/2 cup (80g) mini dark chocolate chips

Wet Ingredients

  • 1/2 cup (160g) agave or maple syrup
  • 1/4 cup (50g) coconut oil
  • 1/4 cup (45g) cacao butter (or additional coconut oil)

Instructions

  1. Melt wet ingredients: In a microwave-safe bowl, combine the agave syrup, coconut oil, and cacao butter. Microwave on high for 30 seconds, then stir thoroughly until the mixture is smooth. Set aside to cool to room temperature.
  2. Blend oats: Place the rolled oats in a food processor and blend for 10 seconds until they reach a powdery consistency with some larger oat pieces remaining.
  3. Add dry mix-ins: Add the shredded coconut, tapioca flour, and salt to the food processor. Pulse for about 5 seconds just to combine.
  4. Incorporate wet mixture: Pour the cooled liquid mixture into the food processor and blend until the dough becomes sticky and holds together.
  5. Mix in chocolate chips: Add the mini dark chocolate chips and pulse a few times to evenly distribute without breaking them down.
  6. Press into pan: Line a 9×5 inch pan with parchment paper. Press the mixture very firmly into the pan to form an even layer.
  7. Chill: Refrigerate the pan overnight, or for a minimum of 6 hours, to allow the bars to firm up completely.
  8. Cut and store: Remove from the fridge, cut into approximately 24 squares, and store in an airtight container in the refrigerator to keep fresh.
