These Honey Lime Chicken Street Tacos are a flavorful, zesty dish that pairs succulent marinated chicken with a tangy, sweet charred pineapple salsa. Perfect for any occasion, they’re a balance of savory, sweet, and citrusy flavors wrapped in warm corn tortillas for a delicious and easy meal.

  • Total Time: 35 minutes
  • Yield: 4 servings (makes 8 tacos)

Ingredients

  • lbs boneless chicken breasts or thighs
  • 3 tbsp honey
  • Juice + zest of 2 limes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1½ cups fresh pineapple, diced
  • ¼ cup red onion, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • Juice of ½ lime
  • Pinch of salt
  • 8 small corn tortillas
  • Extra cilantro for garnish
  • Lime wedges

Instructions

  1. Marinate the Chicken: In a small bowl, whisk together honey, lime juice and zest, olive oil, garlic, chili powder, cumin, salt, and black pepper. Add the chicken to the marinade, making sure it’s evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  2. Grill or Pan-Sear the Chicken: Preheat a grill or skillet over medium-high heat. Grill or pan-sear the chicken for about 5–6 minutes per side, until golden, caramelized, and fully cooked through (internal temperature of 165°F/74°C). Let the chicken rest for a few minutes, then dice it into bite-sized pieces.
  3. Char the Pineapple: Heat a dry skillet or grill pan over medium heat. Char the diced pineapple for 2-3 minutes, until the edges are lightly caramelized. Remove from heat and let cool slightly. Toss the charred pineapple with red onion, cilantro, lime juice, and a pinch of salt.
  4. Warm the Tortillas: Heat the tortillas in a dry skillet or over an open flame until pliable and lightly charred on both sides.
  5. Assemble the Tacos: Place the grilled honey lime chicken into each tortilla, followed by a spoonful of the charred pineapple salsa. Garnish with extra cilantro and serve with lime wedges on the side.

Notes

  • If you want an extra kick, add some diced jalapeño to the pineapple salsa.
  • You can use flour tortillas instead of corn if preferred, but corn tortillas will give an authentic touch.
  • Marinating the chicken for a longer time will give it a richer flavor, so feel free to marinate for up to 4 hours.
