Ingredients
- For the Filling:
- 3 ½ cups sliced peaches
- 1 ½ tablespoons all-purpose flour
- 1 ½ tablespoons honey
- Zest and juice from 1 large lemon
- 1 tablespoon chopped fresh thyme
- For the Dough:
- 1 pie dough, rolled out into a 12-inch circle (store-bought or homemade)
- For the Egg Wash:
- 1 egg yolk, lightly beaten
- 1 tablespoon turbinado sugar
Instructions
- Preheat the Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
- Prepare the Filling: In a large bowl, combine the sliced peaches, flour, honey, lemon zest, lemon juice, and thyme. Stir to combine and set aside.
- Prepare the Dough: Roll the pie dough out into a 12-inch circle. Make sure it’s even and not too thick. Place it on the prepared baking sheet.
- Assemble the Galette: Spoon the peach mixture into the center of the dough, leaving about a 1-inch border. Gently fold the edges of the dough over the peaches, creating pleats as you go. Pinch the edges to secure them.
- Brush the Dough: Brush the folded crust with the egg yolk wash and sprinkle with turbinado sugar.
- Bake: Bake the galette for 20-25 minutes, or until the crust is golden brown and the peaches are bubbling.
- Cool and Serve: Remove from the oven and let cool for 10 minutes before serving. Transfer to a wire rack to cool completely or serve warm. For an extra treat, top with vanilla ice cream or whipped cream.
Notes
- Variations: Use nectarines, plums, or apples for a different twist. Add chopped almonds or pecans to the peach filling for extra crunch. For a savory version, reduce the honey, increase the thyme, and add goat cheese or ricotta. Use a gluten-free pie crust to make this galette gluten-free.
- Storage: Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 3-4 days. Freeze the galette for up to 2 months. Thaw before serving. Reheat in the oven at 350°F for 10-15 minutes or microwave individual slices for 20-30 seconds.
