Ingredients
Broth & Seasoning
- 2 cups low sodium beef broth
- 1 packet au jus gravy mix
- 1 (0.7 oz) pack Italian salad dressing mix
Meat & Vegetables
- 2.5 lbs top round roast
- 3 bell peppers, cut into strips
Sandwich Assembly
- 8 hoagie rolls
- 8 slices provolone cheese
- 16 jar sliced pepperoncini
Instructions
- Prepare the broth and seasoning: In your crock-pot, mix together 2 cups of low sodium beef broth with one packet of au jus gravy mix until fully combined. This will serve as the flavorful base for the roast.
- Add the roast and peppers: Place the 2.5 lb top round roast into the crock-pot, then add the sliced bell peppers on top. Sprinkle the entire contents with the packet of Italian salad dressing mix evenly to infuse the meat and vegetables with Italian flavors.
- Cook the roast: Cover the crock-pot with the lid, and cook on high heat for 4 to 5 hours, or alternatively on low heat for 8 to 10 hours, until the roast is tender and easily shredded with a fork.
- Shred the meat: Remove the roast carefully from the crock-pot and use two forks to shred the beef finely. Return the shredded meat to the crock-pot to soak up more of the flavorful juices and peppers.
- Assemble sandwiches: To serve, lay one slice of provolone cheese on the bottom half of each hoagie roll. Pile on a generous portion of the shredded beef and bell peppers, then add two slices of pepperoncini on top for a tangy bite. Optionally, drizzle some of the cooking liquid onto the top half of the roll or serve it on the side as a dipping broth.
Notes
- Use low sodium beef broth to control the salt content in the final sandwiches.
- Feel free to substitute provolone cheese with mozzarella or fontina for a different flavor.
- Peppers can be roasted beforehand if you prefer a sweeter, smoky flavor.
- The cooking time may vary slightly depending on your crock-pot model; ensure the meat is fork-tender before shredding.
- Serving the cooking liquid as a dip is optional but highly recommended for an authentic Italian beef sandwich experience.
