Ingredients

Broth & Seasoning

  • 2.5 lbs top round roast
  • 3 bell peppers, cut into strips

  • 8 hoagie rolls
  • 8 slices provolone cheese
  • 16 jar sliced pepperoncini

Instructions

  1. Prepare the broth and seasoning: In your crock-pot, mix together 2 cups of low sodium beef broth with one packet of au jus gravy mix until fully combined. This will serve as the flavorful base for the roast.
  2. Add the roast and peppers: Place the 2.5 lb top round roast into the crock-pot, then add the sliced bell peppers on top. Sprinkle the entire contents with the packet of Italian salad dressing mix evenly to infuse the meat and vegetables with Italian flavors.
  3. Cook the roast: Cover the crock-pot with the lid, and cook on high heat for 4 to 5 hours, or alternatively on low heat for 8 to 10 hours, until the roast is tender and easily shredded with a fork.
  4. Shred the meat: Remove the roast carefully from the crock-pot and use two forks to shred the beef finely. Return the shredded meat to the crock-pot to soak up more of the flavorful juices and peppers.
  5. Assemble sandwiches: To serve, lay one slice of provolone cheese on the bottom half of each hoagie roll. Pile on a generous portion of the shredded beef and bell peppers, then add two slices of pepperoncini on top for a tangy bite. Optionally, drizzle some of the cooking liquid onto the top half of the roll or serve it on the side as a dipping broth.
