These Jalapeno Pepper Jack Chicken Burgers are juicy, flavorful, and packed with a spicy kick. A fun twist on traditional burger night, with the heat of jalapenos and the creaminess of melted pepper jack cheese.

Ingredients

  • 2 lbs ground chicken
  • 4 garlic cloves, minced
  • 1/2 onion, finely diced
  • 12 jalapeno peppers, seeded and finely diced
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3/4 cup shredded pepper jack cheese
  • 1/2 cup chopped fresh cilantro
  • Vegetable or olive oil (for grilling)
  • 8 slices of cheese (optional, American or white cheddar)
  • 8 hamburger buns
  • For the Roasted Garlic Mayo:
  • 1 head of roasted garlic
  • 1/3 cup mayonnaise
  • Salt and pepper to taste
  • For the Guacamole:
  • 2 large avocados
  • Juice of 1 lime
  • 2 tablespoons cilantro, finely chopped
  • Salt and pepper to taste

Instructions

  1. Make the Roasted Garlic Mayo: In a small bowl, mix the roasted garlic and mayonnaise together until smooth. Add salt and pepper to taste. Cover and refrigerate until ready to use.
  2. Preheat the grill to medium-high heat.
  3. In a mixing bowl, combine the ground chicken, garlic, onion, jalapenos, paprika, salt, pepper, shredded pepper jack cheese, and cilantro. Gently mix together, being careful not to overwork the meat.
  4. Divide the chicken mixture into 8 equal portions and form into patties.
  5. Lightly coat a paper towel with vegetable oil and run it over the grill grate to prevent sticking.
  6. Grill the burgers covered, over direct heat, for about 8 minutes on each side, or until the internal temperature reaches 165°F (74°C). In the last minute of grilling, add a slice of cheese to each patty if desired.
  7. Make the Guacamole: In a bowl, mash the avocados. Add lime juice, cilantro, salt, and pepper, and mix until combined.
  8. Toast the hamburger buns and assemble the burgers by spreading roasted garlic mayo on the buns, adding the grilled chicken patties, and topping with guacamole. Serve immediately.

Notes

  • If you prefer a milder burger, reduce or omit the jalapenos.
  • For extra flavor, add some pickled jalapenos or hot sauce to the guacamole.
