- 1 ½ cups (300g) granulated sugar
- 3 Tbsp lemon zest
- 2 Tbsp fresh lemon juice
- 1 large egg
- 3 cups (360g) all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- ¼ cup (50g) sugar (for rolling the cookies)
Instructions
- Make the Dough: In a mixing bowl, beat the butter, sugar, and lemon zest with an electric mixer for 1-2 minutes until creamy.
- Add the lemon juice and egg, and beat until fully combined.
- Gradually add the flour, baking soda, and salt. Mix by hand with a spatula until just combined.
- Chill the Dough: Cover the bowl with plastic wrap and refrigerate for 30-60 minutes to firm up the dough.
- Prepare for Baking: Preheat the oven to 350°F (175°C). Place ¼ cup sugar in a separate bowl for rolling the cookies.
- Form the Cookies: Use a cookie scoop to form dough balls, then roll each ball in sugar to coat. Place the cookies 2 inches apart on a silicone-lined baking sheet.
- Bake the Cookies: Bake for 11-13 minutes, or until the edges turn a faint golden color.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
