Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 ¼ cups old-fashioned rolled oats

  • ½ teaspoon baking soda
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons finely grated lemon zest
  • ½ cup fresh lemon juice
  • 2 large egg yolks

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan with baking spray.
  2. Make the Crust and Topping: In a large bowl, combine flour, oats, salt, and baking soda. Stir in granulated sugar and brown sugar. Add the melted butter and vanilla extract, mixing until well combined.
  3. Form the Crust: Press half of the oat mixture firmly into the bottom of the prepared pan. Bake for 15 minutes, then remove from the oven.
  4. Prepare the Lemon Filling: While the crust is baking, whisk together the sweetened condensed milk, lemon zest, lemon juice, and egg yolks in a separate bowl until smooth.
  5. Assemble the Bars: Once the crust is baked, pour the lemon filling over it. Sprinkle the remaining oat mixture evenly on top.
  6. Bake the Bars: Bake for an additional 20-22 minutes, or until the top is lightly golden.
  7. Cool and Refrigerate: Allow the bars to cool completely, then refrigerate until firm. For cleaner slices, chill the bars thoroughly or freeze briefly before cutting.
  8. Optional Chocolate Dipping: For an extra treat, dip the bottom half of the frozen bars in melted white chocolate. Place them on a wax paper-lined baking sheet and refrigerate until set.
