Loaded Steak Fries with Shrimp is the ultimate surf-and-turf indulgence, combining juicy grilled steak, seasoned shrimp, crispy fries, and melty queso with all the toppings for a bold and satisfying dish.

Ingredients

    • Steak & Marinade:
    • 1 whole skirt or flap steak, separated into 23 pieces
    • 2.5 tbsp chipotle garlic rub (or favorite steak rub)
    • 2 tbsp BLK FYR hot sauce (or favorite hot sauce)
    • 2 tbsp chopped cilantro
    • 2 medium limes, juiced
    • 1 navel orange, juiced
    • 1 tbsp avocado oil

 

    • Shrimp & Marinade:
    • 12 lbs shrimp, peeled, deveined, tails removed
    • 2.5 tbsp achiote paste
    • 2.5 tbsp chopped cilantro
    • 1 tbsp avocado oil
    • Salt, to taste

 

  • Fries & Toppings:
  • Cooked French fries
  • 23 cups melted cheese queso
  • Sliced jalapeños
  • Sour cream
  • Guacamole
  • Chopped cilantro
  • Chopped red onions

Instructions

  1. In a large bowl, combine all steak marinade ingredients. Add steak, toss to coat, cover, and refrigerate for at least 4 hours or overnight.
  2. In a separate bowl, mix shrimp with its marinade ingredients. Let sit for 15 minutes, then drain off excess marinade.
  3. Preheat grill to 400°F and oil the grates using avocado oil.
  4. Grill the steak for about 4 minutes per side until medium rare (120°F internal temperature). Remove from grill and let rest.
  5. Heat a cast iron skillet or plancha over the fire with oil. Add shrimp and cook for 2–3 minutes, until they curl into a “C” shape. Remove from heat.
  6. Slice the steak against the grain and cube the pieces.
  7. To assemble, layer cooked French fries and melted queso in a serving dish. Repeat layering if desired.
  8. Top with grilled steak cubes, shrimp, jalapeños, chopped red onions, cilantro, sour cream, and guacamole.
  9. Serve immediately while hot.

Notes

  • For homemade steak fries, use russet, Yukon gold, or red potatoes. Slice thickly, soak in water with baking soda for 30 minutes, dry, season, and bake until golden and crisp.
  • Use freshly grilled steak and shrimp for best flavor and texture.
  • This dish is best served immediately to maintain fry crispiness.
