Ingredients

  • For the Lobster:
  • 1 pound cooked lobster meat (cold)
  • 2 tbsp extra-heavy mayonnaise (cold)
  • 2 tbsp salted butter (softened, plus more if needed)
  • 4 New England-style hot dog rolls (or similar)
  • Minced fresh chives (for topping)
  • ½ lemon (cut into 4 wedges)
  • Salt (to taste)
  • Ground black pepper (to taste)

Instructions

  1. Prepare the Lobster: Cut and tear the lobster meat into large chunks, carefully checking for any bits of shell. Keep the claws as intact as possible for a nice presentation.
  2. Mix the Lobster: Add the lobster meat and mayonnaise to a large bowl. Stir until the lobster is evenly coated.
  3. Toast the Rolls: Heat a skillet over medium-high heat. Generously spread the softened butter on both sides of the hot dog rolls. Place them in the skillet and toast each side until golden-brown, using more butter as needed.
  4. Assemble the Rolls: Fill each toasted roll with about 4 ounces of the lobster mixture. Garnish with minced chives. Serve with a lemon wedge on the side, which can also be squeezed on top. Season with salt and pepper if desired.
  5. Serve Immediately: Enjoy your Maine Lobster Rolls while they’re fresh and warm!

Notes

  • New England-style rolls: These are split-top rolls with flat sides. If you can’t find them, use another type of roll and slice the sides flat for better grilling.
  • Extra-heavy mayonnaise: Made with extra egg yolks for a richer texture. Chilling the mayo helps it coat the lobster better.
