Instructions

- Form the Dough: Pour the wet mixture into the dry ingredients and stir until they are well combined into a thick, slightly sticky dough. Fold in the chopped pistachios carefully to distribute evenly.
- Shape Cookies: Roll the dough into 12 evenly sized 1-inch balls. Place them on the prepared baking sheet spaced about 2 inches apart to allow for spreading during baking.
- Bake: Bake the cookie balls in the preheated oven for 10 to 12 minutes until they are set but not overly browned, allowing the matcha flavor to develop.
- Cool Cookies: Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes to firm up before transferring to a wire rack to cool completely.
