Ingredients

  • 2 lbs (907.18g) ground beef
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1 large egg
  • 1/2 cup (143g) sugar-free BBQ sauce

Instructions

  1. Soak the Skewers (If Using Bamboo): Soak your bamboo skewers in water for 1 hour to prevent them from burning. If air-frying, trim the skewers to fit in your air fryer basket.
  2. Preheat Cooking Method: Preheat your air fryer to 400ºF or your grill to medium-high heat.
  3. Prepare the Meat Mixture: In a large mixing bowl, combine ground beef, minced garlic, onion powder, Italian seasoning, smoked paprika, and the egg. Use your hands to mix everything until well combined.
  4. Form the Meatballs and Skewer: Divide the mixture into 8 equal portions. Roll each portion into a ball, then form them into oval logs around the skewers.
  5. Brush with BBQ Sauce: Set aside half of the BBQ sauce for later. Brush the remaining sauce over the meatloaf skewers.
  6. Cook the Meatloaf Skewers:
    • Air Fryer: Cook the skewers for 12-15 minutes, or until the internal temperature reaches 145ºF (use an instant-read thermometer).
    • Grill: Grill the skewers for about 5 minutes per side, until the internal temperature reaches 145ºF.
