Filling
- 1 diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
- 1/3 cup diced red onion
- 1 cup chopped spinach
- 1/2 cup feta cheese
- 1 cup shredded mozzarella cheese
Other
- 3 burrito style tortillas
- Small amount of oil (for cooking)
Instructions
- Prepare filling: In a mixing bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella. Mix gently until well combined.
- Assemble quesadillas: Divide the filling evenly, placing approximately one-third on one half of each tortilla. Fold the tortilla in half over the filling to form a semicircle.
- Cook quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Transfer the folded tortillas to the pan and cook for 3-4 minutes on each side, pressing down with a spatula to ensure even browning and melting of the cheese.
- Serve: Remove the quesadillas from the pan and cut each into 4 slices. Serve warm with your choice of toppings such as sour cream, salsa, or pico de gallo.

- Use grape or cherry tomatoes for a sweeter flavor, or plum tomatoes if preferred.
- Pressing the quesadilla with a spatula while cooking helps to create an even crust and melt the cheese thoroughly.
