  • Total Time: 30 minutes
  • Yield: 12 meatballs

Ingredients

  • 2 large chicken breasts (cut into pieces)
  • 1 large egg
  • 3 cloves garlic (minced)
  • ¼ cup sun-dried tomatoes (chopped)
  • ½ cup fresh basil leaves
  • ¼ cup seasoned breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and grease a baking sheet. Set aside.
  2. Prepare Chicken Mixture: Cut the chicken breasts into smaller pieces for easier processing. Add the chicken, egg, garlic, sun-dried tomatoes, basil, breadcrumbs, and seasonings into the bowl of a food processor. Pulse until everything is well combined and smooth.
  3. Form Meatballs: Divide the mixture evenly and roll each portion into a ball using your hands.
  4. Bake: Arrange the meatballs on the prepared baking sheet. Bake for 20 minutes, or until golden brown and the internal temperature reaches 165°F.
  5. Cool and Serve: Let the meatballs cool slightly before serving. Enjoy as a snack, appetizer, or main course!
