Ingredients

  • 1 pound ground chicken
  • 1 jar (28 ounces) marinara sauce
  • 2 teaspoons Italian seasoning, divided

  • 1 cup ricotta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 cup parmesan cheese, grated
  • 1 package (18 ounces) frozen cheese ravioli
  • 12 cups mozzarella cheese, shredded
  • Chopped basil or parsley, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×13-inch casserole dish with nonstick cooking spray.
  2. In a large oven-safe skillet, brown the ground chicken over medium heat until fully cooked.
  3. Add the marinara sauce, 1 teaspoon Italian seasoning, salt, and pepper to the skillet. Mix well. Scoop out about half of the sauce and set it aside.
  4. In a medium bowl, mix together the ricotta cheese, fresh parsley, garlic powder, remaining 1 teaspoon of Italian seasoning, and grated parmesan. Stir until well combined.
  5. Place the frozen cheese ravioli over the sauce in the skillet (or in the prepared casserole dish if not using an oven-safe skillet).
  6. Spoon the ricotta mixture evenly over the ravioli and gently spread it out.
  7. Pour the reserved sauce over the top, then sprinkle with mozzarella cheese.
  8. Bake uncovered for 45 minutes. Let the casserole rest for 15 minutes before serving to allow it to set.
  9. Top with fresh basil or parsley before serving, if desired.
