Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Berry Filling: In a bowl, combine the mixed berries, ¼ cup sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Toss gently to coat the berries evenly in the mixture. Let it sit for 5 minutes to allow the juices to release.
- Roll Out the Dough: Unroll the pie dough on the prepared parchment paper. If necessary, roll it slightly with a rolling pin to form a 12-inch circle.
- Assemble the Galette: Spoon the berry mixture into the center of the dough, leaving a 2-inch border all around. Gently fold the edges of the dough over the berries, creating pleats as you go. The center should remain exposed with the filling visible.
- Egg Wash: Beat the egg and brush it generously over the exposed crust for a golden finish.
- Finish & Bake: Sprinkle the top of the crust with coarse sugar for an extra crunch (optional). Bake the galette for 30–35 minutes, or until the crust is golden and the berries are bubbling.
- Cool & Serve: Allow the galette to cool for at least 10 minutes before serving to let the juices thicken up. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
