Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 1/4 pounds)
  • 3/4 teaspoon kosher salt, divided
  • 1/4 teaspoon ground black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil, divided
  • 2 tablespoons butter
  • 12 ounces sliced mushrooms (8 oz cremini, 4 oz shiitake)
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 1/4 cups low sodium chicken broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sherry vinegar
  • 1/2 cup heavy cream
  • 2 teaspoons chopped fresh thyme, plus more for garnish
  • Optional: Mashed potatoes or rice for serving

Instructions

  1. Slice each chicken breast horizontally to create 4 thin cutlets. Pound to even thickness (about ½ inch). Season both sides with ½ teaspoon salt and pepper.
  2. Place flour in a shallow dish. Lightly dredge each chicken cutlet on both sides. Set aside.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 2 chicken pieces and sear for 2–3 minutes per side until golden and cooked to 160°F. Transfer to a plate and cover with foil.
  4. Repeat with remaining 1 tablespoon oil and remaining 2 chicken pieces. Transfer to the same plate.
  5. Reduce heat to medium. Add butter, mushrooms, shallot, garlic, and remaining 1/4 teaspoon salt. Cook for about 10 minutes, until mushrooms are browned and liquid evaporates. Transfer mushrooms to a plate (can place over chicken).
  6. Pour chicken broth into skillet, scraping up browned bits. Whisk in Dijon mustard and sherry vinegar. Simmer for 3 minutes until reduced by half.
  7. Slowly whisk in heavy cream. Return chicken and mushrooms to pan. Simmer for 1–2 minutes until warmed through and coated in sauce.
  8. Sprinkle with fresh thyme and serve over mashed potatoes or rice, spooning sauce over the top.

  • For a lighter version, substitute half-and-half for heavy cream.
