This One-Pot Chicken Parmesan Mac & Cheese combines juicy chicken, tender fusilli pasta, marinara sauce, and gooey cheese into a creamy, comforting dish—all cooked in one pot for minimal cleanup and maximum flavor!

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 2 chicken breasts, diced
  • 8 oz fusilli pasta
  • 1 tsp olive oil
  • 1 cup marinara sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook the Chicken:
    1. Heat olive oil in a large pot over medium heat.
    2. Add the diced chicken and season with salt, pepper, and garlic powder.
    3. Cook for 5-7 minutes, until the chicken is golden brown and fully cooked. Remove and set aside.
  2. Make the Sauce:
    1. In the same pot, stir in marinara sauce, chicken broth, and heavy cream.
    2. Scrape up any browned bits from the bottom of the pot for added flavor. Bring to a simmer.
  3. Cook the Pasta:
    1. Add fusilli pasta to the pot and simmer uncovered for 8-10 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
  4. Add Cheese and Chicken:
    1. Reduce the heat to medium-low. Stir in mozzarella cheese, Parmesan, and Italian seasoning.
    2. Return the cooked chicken to the pot and mix until the cheese melts and the sauce becomes creamy.
  5. Serve and Enjoy:
    1. Let the dish rest for 2-3 minutes to allow the sauce to thicken.
    2. Garnish with extra Parmesan and fresh herbs, then serve warm.

Notes

  • If you want a little extra flavor, add red pepper flakes to the sauce for a slight kick.
  • Feel free to use any short pasta like penne or rotini instead of fusilli.
  • For extra creaminess, add more heavy cream or a dollop of cream cheese.
