Ingredients
- 2 chicken breasts, diced
- 8 oz fusilli pasta
- 1 tsp olive oil
- 1 cup marinara sauce
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Cook the Chicken:
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken and season with salt, pepper, and garlic powder.
- Cook for 5-7 minutes, until the chicken is golden brown and fully cooked. Remove and set aside.
- Make the Sauce:
- In the same pot, stir in marinara sauce, chicken broth, and heavy cream.
- Scrape up any browned bits from the bottom of the pot for added flavor. Bring to a simmer.
- Cook the Pasta:
- Add fusilli pasta to the pot and simmer uncovered for 8-10 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
- Add Cheese and Chicken:
- Reduce the heat to medium-low. Stir in mozzarella cheese, Parmesan, and Italian seasoning.
- Return the cooked chicken to the pot and mix until the cheese melts and the sauce becomes creamy.
- Serve and Enjoy:
- Let the dish rest for 2-3 minutes to allow the sauce to thicken.
- Garnish with extra Parmesan and fresh herbs, then serve warm.
Notes
- If you want a little extra flavor, add red pepper flakes to the sauce for a slight kick.
- Feel free to use any short pasta like penne or rotini instead of fusilli.
- For extra creaminess, add more heavy cream or a dollop of cream cheese.
