Ingredients
- 8 bone-in chicken thighs
- 1 cup BBQ Chicken Rub
- 1 cup Honey Chipotle Barbecue Sauce (or your favorite BBQ sauce)
Instructions
- Coat the chicken thighs evenly with the BBQ rub and let them sit for 15 minutes, or up to 24 hours for a deeper flavor. (If marinating for longer than 30 minutes, store in an airtight container in the refrigerator and allow the chicken to come to room temperature before cooking.)
- Preheat the oven to 400°F (200°C).
- Arrange the chicken thighs on a baking sheet lined with aluminum foil, skin side down, ensuring there’s space between each piece.
- Roast the chicken in the oven for 25 minutes. Flip the chicken over and baste with the honey chipotle BBQ sauce.
- Continue roasting for an additional 25-30 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
- Baste the chicken with the remaining barbecue sauce and switch the oven to broil on high.
- Broil the chicken for 2-3 minutes, or until the sauce is caramelized and slightly charred.
- Serve immediately with extra sauce, if desired.
Notes
- For extra crispy skin, ensure the chicken is skin side up during the last 2-3 minutes of broiling.
- Feel free to adjust the amount of BBQ sauce based on your preference for sweetness or spice.
- This recipe pairs well with mashed potatoes, coleslaw, or grilled vegetables.
