Ingredients
Chicken and Seasoning
- 3 pounds chicken thighs (about 6), bone-in, skin-on
- 3 teaspoons garlic powder
- 2 teaspoons onion powder
- 3 teaspoons smoked paprika
- 1 teaspoon salt
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
BBQ Sauce
- 1/3 cup ketchup
- 1/3 cup low sodium soy sauce
- 1/3 cup honey
- 3 garlic cloves, grated or finely minced
- 3 tablespoons red onion, grated or finely diced
- 1/2 teaspoon ground ginger
- 1 teaspoon hot sauce
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the chicken evenly and thoroughly.
- Prepare Seasoning Mixture: In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, olive oil, and lemon juice until well blended to create a flavorful rub for the chicken.
- Season Chicken: Place the chicken thighs in a 9×13 inch baking dish. Rub the seasoning mixture onto both sides of each chicken thigh, ensuring they are evenly coated.
- Initial Bake: Bake the chicken uncovered for 20 minutes to begin cooking and crisping the skin.
- Make BBQ Sauce: While the chicken bakes, mix ketchup, low sodium soy sauce, honey, grated garlic, grated red onion, ground ginger, and hot sauce in a small bowl until fully combined to create a sticky, flavorful sauce.
- Apply First Sauce Layer: Remove the baking dish from the oven and spread half of the BBQ sauce over each chicken thigh, ensuring even coverage.
- Bake with Sauce: Return the chicken to the oven and bake for an additional 15 minutes to let the sauce set and penetrate the chicken.
- Apply Second Sauce Layer: Spread the remaining sauce over the chicken thighs for an extra sticky glaze.
- Final Bake: Bake for another 15 minutes or until the internal temperature reaches 165°F (74°C) indicating the chicken is fully cooked and safe to eat.
- Rest and Serve: Remove the chicken from the oven and let it rest for 10 minutes. This allows juices to redistribute, ensuring moist and tender chicken. Serve with mashed potatoes or rice.
Notes
- Bone-in, skin-on chicken thighs give the best flavor and moisture for this recipe.
- Make sure to check the internal temperature to guarantee food safety; it should reach 165°F.
- Leftover BBQ sauce can be refrigerated and used as a condiment for other dishes.
- For extra crispy skin, broil the chicken for 2-3 minutes at the very end, watching carefully to avoid burning.
- This dish pairs well with creamy mashed potatoes or fluffy steamed rice to balance the bold flavors.
