Ingredients

Instructions

  1. Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and freshly ground black pepper.
  2. Sear the Cod: Heat olive oil and butter in a skillet over medium-high heat. Sear the cod for about 3–4 minutes per side, or until golden brown and cooked through. Remove the fillets from the skillet and set them aside.
  3. Make the Garlic Cream Sauce: In the same skillet, melt 1 tbsp butter. Add the minced garlic and cook for 30 seconds, stirring occasionally. Stir in the heavy cream and Dijon mustard (if using), and let it simmer for 2–3 minutes, until the sauce slightly thickens. Season with salt and pepper to taste, and stir in the chopped fresh herbs.
  4. Sauté the Spinach: In a separate pan, heat olive oil and garlic over medium heat. Add the fresh spinach and cook, stirring occasionally, until wilted. Season with a pinch of salt.
  5. Assemble the Dish: Place a bed of sautéed spinach on each plate. Top with the seared cod fillet and spoon the garlic cream sauce over the fish.
