Ingredients
- 1 ½ lb chicken breast (about 3–4 pieces, approx. 1 inch thick)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- ⅓ cup grated parmesan
- ⅓ cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning to plain breadcrumbs)
- ½ teaspoon cracked pepper
- ½ – ¾ teaspoon sea salt
- 2 lb red potatoes, cut into bite-sized pieces (quarter small potatoes, larger ones cut into 6–8 pieces)
- 1–2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons grated parmesan
- Salt and pepper to taste
- 1 lb fresh green beans, ends trimmed
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 tablespoon parmesan (optional)
- Salt and pepper to taste
Instructions
- Preheat the Oven: Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper or spray with cooking oil.
- Prepare the Potatoes: In a medium bowl, toss the potatoes with garlic, olive oil, grated parmesan, salt, and pepper. Spread on one-third of the sheet pan. Bake for 10-15 minutes.
- Prepare the Chicken: While the potatoes bake, combine olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt in a small bowl. Coat the chicken evenly with the mixture.
- Add the Chicken: After 10-15 minutes, add the chicken to the sheet pan and return to the oven.
- Prepare the Green Beans: Toss green beans with olive oil, minced garlic, parmesan (optional), and salt and pepper in the same bowl used for the chicken. Add green beans to the remaining section of the sheet pan.
- Bake: Bake for an additional 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). For crispier potatoes, broil for 4-5 minutes.
- Serve: Let the dish cool slightly before serving.
Notes
- For boneless, skinless chicken thighs, adjust cooking time.
- Substitute with Yukon Gold or russet potatoes if preferred.
- This dish can be made ahead of time by prepping the chicken and potatoes and storing them in the fridge for up to 24 hours. Add the green beans just before baking.
- If using frozen green beans, thaw and pat dry before adding them to the pan.
