Yogurt Mixture
- 2 cups Greek yogurt, plain or honey vanilla
- ⅔ cup peanut butter (natural, JIF recommended)
Chocolate Coating
- 1 ½ cups chocolate chips
- 1 ½ teaspoons coconut oil

- Prepare the cookie sheet: Line a cookie sheet with parchment paper to prevent the bites from sticking when you place the coated bites on it.
- Mix ingredients: In a small mixing bowl, thoroughly combine the Greek yogurt and peanut butter until smooth and evenly blended.
- Spoon into molds: Using a medium cookie scoop, portion the yogurt and peanut butter mixture into each section of a silicone ice cube mold for evenly sized bites.
- Freeze: Place the mold in the freezer and let the bites freeze solid for 1 to 1 ½ hours to ensure they hold their shape.
- Melt chocolate: In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave for 30 seconds, stir, then continue microwaving in 30-second intervals, stirring after each, until smooth and melted.
- Coat and freeze: Carefully pop the frozen yogurt bites out of the mold, dip each one into the melted chocolate coating, and place them on the prepared parchment paper. Alternatively, drizzle chocolate on top instead of dipping. Return to the freezer for an additional 10 minutes to set the chocolate.
