- 1 lb Roma tomatoes (3–4 medium), diced
- 1/2 medium white onion (about 1 cup), finely chopped
- 1 jalapeño pepper, seeded and finely minced (optional)
- 1/2 cup chopped fresh cilantro
- 2 tablespoons lime juice (from 1 lime)
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon black pepper
Instructions
- In a medium bowl, combine diced tomatoes, chopped onion, minced jalapeño (if using), and cilantro.
- Add lime juice, salt, and black pepper. Stir to mix well.
- Taste and adjust seasoning as needed.
- Serve immediately, or cover and refrigerate for a few hours to allow flavors to meld. Drain excess liquid before serving, if desired.
Notes
- Use ripe, firm tomatoes for best texture and flavor.
- Red onion can be used in place of white for a milder bite.
- For extra heat, leave the jalapeño seeds in or add a serrano pepper.
