Ingredients

  • 1 lb Roma tomatoes (34 medium), diced
  • 1/2 medium white onion (about 1 cup), finely chopped
  • 1 jalapeño pepper, seeded and finely minced (optional)
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons lime juice (from 1 lime)
  • 1/2 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper

Instructions

  1. In a medium bowl, combine diced tomatoes, chopped onion, minced jalapeño (if using), and cilantro.
  2. Add lime juice, salt, and black pepper. Stir to mix well.
