Instructions
- Prepare the Chicken: If using chicken breasts, pound them to an even thickness of ½ to ¾ inch by placing the breasts between plastic wrap and gently pounding with a mallet or rolling pin. This ensures they cook evenly. Skip this step if using chicken thighs.
- Season the Chicken: In a small bowl, mix smoked paprika, garlic powder, salt, and freshly cracked black pepper. Rub this spice blend evenly on both sides of the chicken pieces for a balanced flavor.
- Cook the Chicken: Heat a large skillet over medium heat. Add 1 tablespoon of cooking oil and swirl to coat the pan. Place the seasoned chicken into the hot skillet and cook each side for about 5 to 7 minutes until the chicken is golden brown and reaches an internal temperature of 165ºF, ensuring it’s fully cooked.
- Apply BBQ Sauce and Rest: Turn off the heat and brush both sides of the chicken with 1/4 cup BBQ sauce. Allow the chicken to rest in the pan for 5 minutes to let the sauce set and the juices redistribute before slicing and serving.
