Ingredients
Wet Ingredients
- 1 1/2 cup cottage cheese (small curd, full fat)
- 4 eggs
- 1/2 tbsp vanilla paste
- 1/2 tbsp white vinegar
- 1 egg (to brush the tops)
Dry Ingredients
- 1/2 cup sugar
- 1/2 tbsp baking powder
- 1 tsp baking soda
- 4 cup flour
- 1/4 cup sugar (to sprinkle on tops)
Instructions
- Combine wet ingredients and sugar: In a blender, mixer, or food processor, blend together the cottage cheese, sugar, 4 eggs, and vanilla paste until the mixture is smooth and evenly combined.
- Add leavening agents: In a small bowl, mix baking soda with white vinegar to activate it. Add this mixture to the blended wet ingredients, then incorporate the baking powder and flour slowly, mixing until a sticky dough forms.
- Prepare the dough: Generously flour your work surface as the dough will be sticky. Turn the dough out onto the surface and divide it into 24 equal pieces.
- Shape the buns: Roll each piece into a round bun shape and place them spaced apart on a baking sheet. Brush the tops of each bun with the remaining egg and sprinkle with sugar for a slight crunch and sweetness on top.
- Bake the buns: Preheat the oven to 350 °F (175 °C). Bake the buns for about 20 minutes or until they are golden brown on top. Remove from the oven and allow them to cool to room temperature before serving. Store any leftovers in an airtight container to maintain freshness.
Notes
- Using full-fat small curd cottage cheese adds to the creaminess and moisture of the buns.
- Be sure to flour your work surface well to handle the sticky dough effectively.
- Brush the buns with egg wash before baking for a golden and shiny crust.
- You can store leftover buns sealed in an airtight container at room temperature for up to 2 days or refrigerate for longer storage.
- These buns freeze well; simply thaw at room temperature before serving.
