Ingredients
Vegetables
- 2 pounds large carrots, peeled and cut into 2 inch pieces
Sauce
- 1/2 cup butter
- 3 tablespoons honey
- 2 garlic cloves, chopped
Seasonings
- Salt and pepper, to taste
- Parsley, chopped for garnish
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it’s hot enough to roast the carrots to tender perfection.
- Make Brown Butter Honey Garlic Sauce: In a medium saucepan over medium-high heat, add the butter and whisk continuously for a few minutes until the butter turns frothy and brown, releasing a nutty aroma. Once browned, stir in the honey and chopped garlic, then immediately remove from heat to prevent burning.
- Prepare Carrots: Peel the large carrots and cut them into 2-inch pieces. Place the carrots in a large bowl and pour the browned butter honey garlic sauce over them. Toss well to coat all the carrot pieces evenly.
- Arrange for Roasting: Spread the coated carrots in a single layer on a large baking sheet. Season with salt and pepper to taste, then cover the baking sheet with foil to help steam and start the cooking process.
- Roast Carrots: Bake covered for 10 minutes. After 10 minutes, remove the foil and continue roasting for an additional 5 to 10 minutes until the carrots are tender and golden brown, allowing the glaze to caramelize nicely.
- Serve: Transfer the roasted carrots to a serving dish, garnish with freshly chopped parsley, and serve immediately for a warm and flavorful side.
Notes
- You can use fresh or dried parsley depending on availability.
- Adjust the amount of honey based on your preferred sweetness level.
- Ensure the butter is browned but not burnt to avoid a bitter taste.
- These carrots pair well with roasted meats or as part of a holiday meal.
- For a vegan version, substitute butter with a plant-based alternative.
