Ingredients
- Roasted Garlic Dip
- 1 head of garlic
- 2 tsp olive oil
- ½ cup mayonnaise
- ½ cup sour cream
- ¼ tsp black pepper
- 2–3 dashes Worcestershire sauce
- 1 tablespoon Dijon mustard
- ¼ cup parmesan cheese, grated
- Sweet Potato Wedges
- 2 sweet potatoes, cut into wedges
- 1 tbsp olive oil
- 1 tsp salt
- ¼ tsp black pepper
- ¼ tsp dried rosemary (optional)
Instructions
- How To Roast Whole Garlic: Preheat the oven to 400°F (200°C). Remove excess skin from the garlic bulb and cut the top off so the garlic is exposed. Drizzle with olive oil and wrap in tin foil. Place it on a rimmed cookie sheet. Roast for 30-35 minutes, or until the garlic is soft (poke with a knife or fork to test). Let cool before handling.
- Roasted Garlic Dip: In a bowl, mix together the mayonnaise, sour cream, black pepper, Worcestershire sauce, Dijon mustard, and parmesan cheese. Once the garlic has cooled, squeeze the garlic out onto a cutting board and mash with a fork. Add the mashed garlic to the bowl and mix everything together. If you prefer a milder garlic flavor, you can add just half of the roasted garlic. Place the dip into an oven-safe dish and bake at 375°F (190°C) for 15 minutes. Then turn on the broiler and broil for a few minutes until the top is lightly browned.
- Sweet Potato Wedges: Preheat the oven to 425°F (220°C). Place the sweet potato wedges into a bowl and drizzle with olive oil. Season with salt and pepper. Arrange the wedges on a rimmed cookie sheet and roast for 15-20 minutes, or until tender and crispy. Sprinkle dried rosemary over the potatoes and let them cool slightly before serving.
- Serve the warm sweet potato wedges with the roasted garlic dip and enjoy!
Notes
- If you prefer a milder garlic flavor, reduce the amount of garlic in the dip or use only half of the roasted garlic.
- For extra crispiness, flip the sweet potato wedges halfway through roasting.
- For a dairy-free option, replace the sour cream and mayonnaise with plant-based alternatives.
