Ingredients

  • Roasted Garlic Dip
  • 1 head of garlic
  • 2 tsp olive oil
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ tsp black pepper
  • 23 dashes Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • ¼ cup parmesan cheese, grated
  • Sweet Potato Wedges
  • 2 sweet potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried rosemary (optional)

Instructions

  1. How To Roast Whole Garlic: Preheat the oven to 400°F (200°C). Remove excess skin from the garlic bulb and cut the top off so the garlic is exposed. Drizzle with olive oil and wrap in tin foil. Place it on a rimmed cookie sheet. Roast for 30-35 minutes, or until the garlic is soft (poke with a knife or fork to test). Let cool before handling.
  2. Roasted Garlic Dip: In a bowl, mix together the mayonnaise, sour cream, black pepper, Worcestershire sauce, Dijon mustard, and parmesan cheese. Once the garlic has cooled, squeeze the garlic out onto a cutting board and mash with a fork. Add the mashed garlic to the bowl and mix everything together. If you prefer a milder garlic flavor, you can add just half of the roasted garlic. Place the dip into an oven-safe dish and bake at 375°F (190°C) for 15 minutes. Then turn on the broiler and broil for a few minutes until the top is lightly browned.
  3. Sweet Potato Wedges: Preheat the oven to 425°F (220°C). Place the sweet potato wedges into a bowl and drizzle with olive oil. Season with salt and pepper. Arrange the wedges on a rimmed cookie sheet and roast for 15-20 minutes, or until tender and crispy. Sprinkle dried rosemary over the potatoes and let them cool slightly before serving.
  4. Serve the warm sweet potato wedges with the roasted garlic dip and enjoy!

Notes

  • If you prefer a milder garlic flavor, reduce the amount of garlic in the dip or use only half of the roasted garlic.
  • For extra crispiness, flip the sweet potato wedges halfway through roasting.
