Chuck roast is slowly cooked with onions and butter to create a luscious and tender, melt-in-your-mouth beef, perfect for sandwiches. Served with a savory dipping sauce, this dish is a delicious, comforting meal that’s easy to make in your slow cooker.

Ingredients

  • For the Beef:
    • 1 large yellow onion, sliced
    • 4 lb chuck roast, trimmed
    • 1 tsp black pepper, freshly ground
    • 1 oz au jus gravy mix (1 packet)
    • 1 oz onion soup mix (1 packet)
    • 2 tsp Worcestershire sauce
    • 2 cups beef broth
  • For the Sandwiches:
    • 8 medium hoagie rolls
    • 3 tbsp butter, softened
    • 8 oz provolone cheese, sliced
    • Freshly chopped parsley, for garnish

Instructions

  1. Place the sliced onions in the bottom of the slow cooker. Season the chuck roast with black pepper on both sides and place it on top of the onions.
  2. Sprinkle the au jus mix and onion soup mix over the top of the beef.
  3. In a separate bowl, mix together the Worcestershire sauce and beef broth, then pour it into the slow cooker. If you prefer more gravy for dipping, use more beef broth.
  4. Cover and cook on LOW for 7 to 8 hours, or until the beef is very tender and falls apart easily.
  5. Carefully remove the beef from the slow cooker. Use a slotted spoon to remove the onions and place them in a separate bowl for later.
  6. Using a fine-mesh strainer, pour the drippings from the slow cooker into a bowl or gravy boat to use as the dipping sauce for the sandwiches.
  7. Assemble the Sandwiches: Cut the sandwich rolls open and spread butter (if desired) on the inside. Toast until lightly browned.
  8. Top with shredded beef, onions, and provolone cheese.
  9. Garnish with freshly chopped parsley, if desired.
  10. Serve the toasted sandwiches with the warm dipping sauce and enjoy!

Notes

  • If you prefer a spicier sandwich, add some hot sauce or horseradish to the beef before serving.
  • For a richer flavor, you can also sauté the onions in butter before adding them to the slow cooker.
  • If you don’t have provolone cheese, mozzarella or Swiss cheese works well as alternatives.
  • Feel free to adjust the amount of beef broth depending on how much gravy you want to serve with your sandwiches.
