For the Flatbread Pizza
- 2 flatbread crusts (15 ounces) (store-bought)
- 2 tablespoons olive oil (divided)
- ⅓ cup small yellow onion (diced small)

- 10 oz fresh spinach (chopped)
- ½ cup shredded mozzarella
- ½ cup crumbled feta cheese (preferably from a block for brinier flavor)
- 2 tablespoons grated Parmesan cheese
- ½ teaspoon dried oregano (for garnish)
- ¼ teaspoon crushed red pepper flakes (optional)
Instructions
- Sauté the Vegetables: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and cook them for 4 to 5 minutes until they turn golden and soft. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma. Then add the chopped spinach and sauté until it wilts, about 2 to 3 minutes. Season the mixture with salt, pepper, and the optional crushed red pepper flakes to taste.
- Prepare the Flatbreads: Preheat your oven to 500°F (260°C). Place the flatbread crusts on a baking sheet and brush each crust with the remaining 1 tablespoon of olive oil to help them crisp up and add flavor.
- Assemble the Pizzas: Evenly divide the sautéed spinach mixture over the two prepared flatbread crusts. Sprinkle the shredded mozzarella, crumbled feta, and grated Parmesan cheese evenly over the top to create a rich and cheesy layer.
- Bake the Pizzas: Place the baking sheet with the assembled flatbreads in the center of the preheated oven. Bake for 3 to 5 minutes until the cheese has melted and the edges of the flatbreads become crisp and golden.
- Finish and Serve: Remove the pizzas from the oven and sprinkle with dried oregano as a finishing touch. Slice into desired portions and serve warm for the best flavor and texture.
