A healthy, flavorful twist on the traditional salmon burger, with spinach, feta, and a touch of Dijon mustard. Perfect for a quick meal or light lunch.

Ingredients

  • 2 (6-ounce) cans skinless, boneless salmon, drained
  • 1 egg, beaten
  • ½ cup ground old-fashioned oats (or breadcrumbs)
  • 2 cups finely chopped spinach (about 5 ounces)
  • ¾ cup crumbled feta cheese
  • 2 tablespoons chopped fresh chives (or any type of onion)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt (more to taste)
  • 1 tablespoon extra virgin olive oil (for cooking, more if needed)
  • Freshly ground black pepper, to taste
  • Burger buns and/or toppings (optional)

Instructions

  1. Prepare the Burger Mixture: In a large mixing bowl, add the drained salmon and use a fork to flake it. Add the beaten egg, ground oats, chopped spinach, feta cheese, chives, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix everything together with a rubber spatula until fully combined.
  2. Form the Patties: Use your hands to form 6 to 8 patties of equal size. For smaller patties, make 8; for larger ones, make 6. Place the patties on a plate.
  3. Cook the Patties: Heat olive oil in a large skillet over medium heat. Once the oil is hot, place the salmon patties into the skillet and cook for 4-5 minutes on each side, until browned and crispy. If all the patties don’t fit in the skillet at once, cook in batches.
  4. Serve: Remove the cooked patties from the skillet and serve with or without burger buns. Top with your favorite toppings—yogurt sauce with Greek yogurt, lemon juice, and fresh dill is a great option!
