This one-skillet Steak Fried Rice is better than takeout! Packed with savory flavors, it comes together in under 30 minutes for a deliciously quick and satisfying meal.

Ingredients

  • ½ pound sirloin steak
  • ¾ teaspoon baking soda
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 3 teaspoons brown sugar
  • 3 tablespoons canola oil (divided)
  • 3 cloves garlic, minced
  • ¼ cup white onion, diced
  • 3 cups cooked white rice (preferably day-old)
  • 1 cup frozen peas and carrots
  • 2 eggs
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Slice the sirloin steak into small, thin strips. Toss the meat with baking soda in a medium bowl and set aside.
  2. In a small bowl, combine the soy sauce, oyster sauce, sesame oil, and brown sugar. Whisk until the mixture is well combined. Pour half of the sauce over the sliced steak and toss to coat. Reserve the rest of the sauce for later. Refrigerate and marinate the steak for 30 minutes.
  3. Heat 2 tablespoons of canola oil in a large 12-inch skillet or wok over high heat. Once the pan is slightly smoking, add the marinated steak. Spread it out (or cook in batches if your pan isn’t large enough). Cook for 30-60 seconds, then flip the steak and cook for another 30 seconds. Remove the steak to a plate and set aside.
  4. Add the remaining 1 tablespoon of canola oil to the skillet. Add the diced onion and cook for 1-2 minutes until softened. Then, add the minced garlic and cook for another 30 seconds until fragrant.
  5. Add the cold rice to the skillet and stir constantly for 1-2 minutes. Then, add the frozen peas and carrots, along with the remaining sauce. Toss until everything is coated.
  6. Add the cooked steak back into the skillet and toss to combine with the rice mixture.
  7. Push the fried rice to one side of the skillet. Add a teaspoon of oil if needed, and crack the eggs into the empty space. Use a spatula to break up the eggs and swirl them around until fully cooked. Then, incorporate the eggs into the fried rice.
  8. Garnish with green onions and serve hot!

Notes

  • For best results, use day-old rice as it helps the rice fry better and prevents it from becoming mushy.
  • You can substitute the sirloin steak with flank steak or another cut of your choice.
  • If you prefer a spicier dish, add some chili flakes or a dash of hot sauce when cooking the rice.
