- 1 ½ cups milk of choice
- 1 tsp vanilla extract
- 2 ½ cups rolled oats
- 1 tsp baking powder
- ¼ tsp fine sea salt
- ¼ tsp cinnamon (add more for extra flavor)
- For the Strawberries:
- 1 pint strawberries, hulled and sliced lengthwise
Instructions
- Preheat the Oven: Preheat your oven to 375ºF. Grease a 9×9 baking dish (or similar size).
- Whisk Wet Ingredients: In a large bowl, whisk together the eggs, oil, maple syrup, milk, and vanilla extract.
- Stir in Dry Ingredients: Add in the rolled oats, baking powder, salt, and cinnamon. Stir to combine and set aside to rest.
- Prepare the Strawberries: Hull and slice the strawberries lengthwise to yield about 2 cups.
- Combine Oats and Strawberries: Gently fold most of the sliced strawberries into the oat mixture (save some slices for serving or topping).
- Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Top with the remaining strawberry slices (or save for serving).
- Bake: Bake for 35–40 minutes, or until the top is golden and the middle is set. You can serve it immediately in a bowl style or let it sit for about 20 minutes to serve as squares.
- Serve: Enjoy the oatmeal with your favorite toppings like yogurt, cream, or a drizzle of extra maple syrup or honey.
