Ingredients

  • 125g salted butter, room temperature (1/2 cup + 1 tbsp)
  • 100g light brown sugar (1/2 cup, packed)
  • 50g granulated sugar (3 tbsp + 2 tsp)

  • 1 large egg, room temperature
  • 1 tsp double cream or heavy cream
  • 220g plain flour (1 cup + 1/4 cup + 2 tbsp)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 30g granulated sugar, for coating the cookie dough balls (2 tbsp + 1 tsp)
  • 100ml double cream or heavy cream (1/4 cup + 3 tbsp)
  • 1/2 tsp vanilla extract
  • 1 heaped tbsp icing sugar or powdered sugar
  • 100g cream cheese, room temperature (1/4 cup + 3 tbsp)
  • Fresh strawberries, chopped
  • Strawberry jam
  • Biscuit crumbs or graham cracker crumbs

Instructions

  1. Brown Sugar Cookies: In a large mixing bowl, add room temperature butter, brown sugar, and granulated sugar. Mix until combined and creamy using a mixer or spoon.
  2. Add the egg, heavy cream, and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, mix together flour, baking powder, and baking soda. Gradually fold this dry mixture into the wet mixture using a spoon or spatula. Be careful not to overmix.
  4. Chill the dough in the fridge for about 1 hour.
  5. Prepare the Cookies for Baking: Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  6. Once chilled, scoop out dough into 90g portions (or use a cookie scoop for even sizing). Roll each ball in granulated sugar before placing them on the baking sheet.
