Instructions

  1. Prepare the dough: In a large bowl, combine the sweet potato puree, flour, olive oil, dried thyme, garlic powder, onion powder, baking powder, and salt. Mix and knead together until a smooth dough forms. If the dough feels sticky, gradually add more flour, one tablespoon at a time, until manageable. Cover the dough and refrigerate for at least 30 minutes to firm up.
  2. Preheat the oven and roll dough: Preheat your oven to 160℃ (fan), 175℃ (conventional), or 375℉. Lightly flour your work surface and roll out the chilled dough to about 3 mm (⅛ inch) thickness. For a crunchier texture, roll the dough thinner; for a softer, chewy texture, roll it thicker.
  3. Cut the crackers: Use a sharp knife, pizza cutter, or small cookie cutter to cut the dough into small squares or rounds. Gather any leftover dough, re-roll it, and continue cutting until all dough is used.
  4. Prepare for baking: Arrange the uncooked crackers on a baking sheet lined with parchment paper, spacing them slightly apart. Use a skewer to poke a few small holes in each cracker to prevent air pockets from forming during baking.
  5. Bake the crackers: Place the baking sheet in the oven and bake for 10 minutes. Remove from the oven, flip each cracker, and rotate the tray to promote even baking. Return to the oven and bake for an additional 10 minutes until the crackers are golden and crisp.
