Ingredients
- 1 cup brown rice, cooked
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 2 bell peppers, red and yellow, chopped
- 1.5 lb ground beef (90% lean)
- 2 tablespoons tomato paste
- 2 tablespoons taco seasoning
- 1 cup chunky mild salsa
- 1 cup chicken broth (or more, as needed)
- Salt and pepper, to taste
- 1 cup canned yellow corn, drained
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded Mexican-style cheese
- 1/2 cup grape tomatoes, halved
- 1 lime, sliced
- Chopped parsley, for garnish
Instructions
- Prepare the rice: Boil 1 cup of brown rice in 2 cups of water until cooked, if not using pre-cooked or instant rice.
- In a large 12-inch skillet, heat olive oil over medium heat. Add chopped onions and garlic; sauté for 4 minutes.
- Add chopped red and yellow bell peppers and cook for 1 more minute.
- Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
- Stir in tomato paste and taco seasoning until well combined.
- Pour in salsa and chicken broth, stirring to combine. Taste and season with salt and pepper as needed.
- Once simmering, add the cooked rice, corn, and black beans. Cover and cook for an additional 10 minutes until heated through. Add more salsa or broth if more liquid is desired.
- Sprinkle shredded cheese over the top, cover again, and allow the cheese to melt.
- Serve hot, topped with halved grape tomatoes, lime slices (squeeze for juice), and chopped parsley.
Notes
- For a spicier version, use hot salsa or add diced jalapeños.
- Can be made ahead and stored in the fridge for up to 4 days.
- Use this filling for burritos, tacos, or nachos.
- Substitute ground turkey or chicken for a leaner option.
