Instructions

  1. Use a potato masher to mash the mixture until it mostly holds together but still has some visible chunks of black beans for texture.
  2. Add binding agents: Add the large egg to the mashed bean mixture and fold it in gently with a spatula until fully incorporated. Then fold in the panko bread crumbs to create a mixture that holds together but remains slightly wet.
  3. Form patties: Use your hands to shape the mixture into 6 evenly sized patties. If the mixture feels too wet and difficult to handle, chill the patties in the fridge for 20 minutes to firm up, or mash the beans a bit more to reduce moisture.
  4. Cook the patties (skillet method): Heat a cast-iron skillet over medium heat and brush lightly with olive oil. Cook the patties for about 5 minutes per side, until they develop a nice char and are heated through. Adjust the heat as necessary to prevent burning while ensuring even cooking.
