Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to ensure it reaches the right temperature by the time your batter is ready.
- Prepare the cake pan: Lightly grease a 9-inch round cake pan with a bit of olive oil, then dust it with flour to prevent sticking.
- Mix wet ingredients: In a small bowl or liquid measuring cup, whisk together the olive oil, orange juice, non-dairy milk, orange zest, and vanilla extract until combined.
- Combine dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, organic granulated sugar, baking powder, baking soda, and salt until evenly mixed.
- Make the batter: Pour the wet mixture into the bowl with the dry ingredients and gently stir until most lumps disappear. The batter does not need to be perfectly smooth.
- Pour and bake: Transfer the batter to the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for about 25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake: Place the cake pan on a wire rack and let it cool completely before removing from the pan.
- Invert and serve: Carefully invert the cooled cake onto a serving plate. Optionally, dust the top with organic powdered sugar. Slice into 8 pieces and enjoy.
Notes
- Check the ingredients label if using store-bought orange juice to ensure it contains no animal-derived additives.
- If using freshly squeezed orange juice, about two medium-sized oranges will yield enough juice and zest.
