Ingredients
- 3 large eggs
- 1 cup grated Parmesan cheese
- 1/2 cup canola oil
- 1 tablespoon minced fresh parsley
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 cups sliced zucchini
- 1 cup biscuit/baking mix
- 1 small onion, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, Parmesan cheese, canola oil, parsley, garlic, salt, and pepper.
- Stir in the sliced zucchini, baking mix, and chopped onion.
- Pour the mixture into a greased 9-inch deep-dish pie plate.
- Bake for 25-35 minutes, or until the pie is lightly browned and cooked through.
- Let cool slightly before slicing and serving.
Notes
- For a crispier crust, you can pre-bake the pie crust for 5 minutes before adding the filling.
- If you’d like more flavor, consider adding other herbs such as thyme or basil.
- For a vegetarian option, replace the Parmesan with a plant-based cheese.
