Chicken and Sauce

Instructions
- Heat the oil: Warm 2 teaspoons of olive oil in a large skillet over medium-high heat to prepare for cooking the chicken.
- Season the chicken: Lightly season the cubed chicken pieces with salt and black pepper, keeping the salt minimal because of the soy sauce’s sodium content.
- Brown the chicken: Add the chicken cubes to the hot skillet and cook without moving for about 3-4 minutes to brown one side.
- Prepare the glaze: While chicken browns, whisk together 3 tablespoons honey, 3 tablespoons low-sodium soy sauce, minced garlic, and red pepper flakes (if using) in a small bowl until well combined.
- Cook chicken with glaze: Flip the chicken pieces to brown the other side, then pour the sauce over the chicken. Toss to coat, and cook for an additional 4-5 minutes until the chicken is cooked through and the glaze has thickened slightly, stirring occasionally.
- Serve: Serve the honey garlic chicken over steamed brown or white rice. Garnish with sliced green onions, sesame seeds, chopped peanuts if desired, and a squeeze of fresh lime juice to brighten the flavors.
