- 3 tbsp cornstarch
Cooking and Glaze
- 2 tbsp avocado oil

- ¼ cup honey
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- 3 tbsp water (to thin out the glaze)
- 2 tbsp cold butter

Instructions
- Prepare the Chicken: Cut the chicken breasts into 1-inch cubes. In a bowl, season the chicken evenly with salt, black pepper, and garlic powder. Mix in the cornstarch ensuring each piece is well coated.
- Heat the Skillet: Warm 2 tablespoons of avocado oil over medium-high heat in a large skillet. Once hot, add the chicken cubes and sear them until golden brown and crispy, approximately 5 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté Garlic and Spices: Lower the heat to medium-low. In the same skillet, add the minced garlic and optional red chili pepper flakes, sautéing for about 1 minute until fragrant but not burnt.
- Make the Glaze: Stir in the honey, soy sauce, lemon juice, and water. Cook the mixture, stirring frequently, for about 2 minutes until the sauce slightly thickens.
- Finish the Sauce: Add cold butter to the skillet and swirl continuously until the glaze becomes glossy and luscious.
- Combine Chicken and Glaze: Return the cooked chicken bites to the skillet and toss well to coat each piece thoroughly with the honey-garlic glaze.
- Serve: Garnish with chopped chives and serve immediately for a delightful and savory meal.
