Ingredients
- Pumpkin Truffles:
- 1/3 cup pumpkin puree
- 3 tablespoons maple syrup
- 1/4 cup natural nut or seed butter (homemade or store-bought)
- 1 scoop (34g) plant protein powder*
- 2 1/2 tablespoons coconut flour**
- 2 teaspoons pumpkin pie spice
- 3/4 teaspoon espresso powder (optional)
- Chocolate Coating:
- 5 oz dairy-free chocolate (about 3/4 cup chocolate chips)
- 1/2 tablespoon coconut oil, melted
Instructions
- Line a baking sheet with parchment paper or a silicone mat and set aside.
- In a medium bowl, mix together the pumpkin puree, maple syrup, and nut or seed butter until well combined.
- Add in the protein powder, coconut flour, pumpkin pie spice, and espresso powder (if using). Stir until a dough forms.
- Using a small cookie scoop or tablespoon, roll the mixture into balls between the palms of your hands and place them on the prepared baking sheet.
- Transfer the baking sheet to the freezer for 10 minutes to firm up the truffles for easier coating.
- Meanwhile, melt the dairy-free chocolate and coconut oil together in a microwave-safe bowl (in 20-second increments at 50% power), or on the stovetop over low heat, stirring constantly.
- Dip each chilled truffle into the melted chocolate until fully coated. Use a spoon to help coat evenly and return each one to the lined baking sheet.
- Once all truffles are coated, return the baking sheet to the freezer for another 10 minutes to set the chocolate.
- Enjoy immediately or store in the fridge or freezer for later!
