This Air Fryer Coffee Cake is a delightful treat featuring a tender, moist cake topped with a crumbly cinnamon brown sugar streusel. Perfectly baked in an air fryer, this coffee cake offers a quick and convenient way to enjoy a classic dessert with a golden, flavorful crust and swirls of cinnamon topping.

  • Total Time: 30 minutes
  • Yield: 16 servings

Ingredients

Streusel Topping

  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • Dash salt
  • ¼ cup unsalted butter, melted

Cake Batter

  • ½ cup unsalted butter, room temperature
  • ¾ cup sugar
  • 1 large egg
  • 1 large egg yolk
  • ½ cup sour cream
  • 1 teaspoon vanilla bean paste
  • 1 ⅓ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Prepare the Streusel: Grease an 8-inch square baking pan and line the bottom and sides with parchment paper. In a small bowl, mix the flour, brown sugar, cinnamon, and salt using a fork until evenly combined. Add the melted butter and stir until the mixture is moistened and crumbly.
  2. Make the Cake Batter: In a large bowl, beat the room temperature butter and sugar together until light and fluffy. Add the egg, egg yolk, sour cream, and vanilla bean paste, mixing until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet butter mixture, stirring gently just until combined to avoid overmixing.
  4. Assemble the Cake: Pour the batter into the prepared pan and spread it evenly. Evenly sprinkle the streusel topping over the batter and create swirls with a skewer or knife to incorporate the streusel into the top layer.
  5. Air Fry the Cake: Place the pan in the air fryer and bake at 160ºC (320°F) covered with foil for 15 minutes. Remove the foil and continue baking for an additional 5 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Cool and Serve: Allow the cake to cool completely in the pan before cutting into 16 squares. Serve and enjoy your delicious air-fried coffee cake.

Notes

  • Using parchment paper helps prevent the cake from sticking and makes cleanup easier.
  • Covering the cake with foil during the initial baking prevents the streusel topping from burning.
  • Allow the cake to cool fully to let the texture set, making slicing easier and cleaner.
  • Vanilla bean paste can be substituted with pure vanilla extract if needed.
  • Be careful not to overmix the batter once combining the dry ingredients to keep the cake tender.
