Ingredients
- 2 cups old-fashioned rolled oats
- 1/2 cup chopped nuts (almonds, pecans, or walnuts)
- 1/4 cup seeds (pumpkin, sunflower, or chia)
- 1/2 cup shredded coconut (optional)
- 1 teaspoon ground cinnamon
- Pinch of salt
- 1/4 cup honey or maple syrup
- 3 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup dried fruit (raisins, cranberries, or cherries – added after cooking)
Instructions
- In a large bowl, combine oats, nuts, seeds, coconut (if using), cinnamon, and salt.
- Stir in honey or maple syrup, melted coconut oil, and vanilla. Mix well until evenly coated.
- Preheat air fryer to 300°F (150°C).
- Line air fryer basket with a parchment liner (with holes) or use an air fryer-safe liner.
- Spread granola mixture in a thin, even layer in the basket.
- Cook for 12–15 minutes, shaking or stirring every 4–5 minutes to ensure even cooking and prevent burning.
- Let granola cool completely—it will crisp up as it cools.
- Once cooled, stir in dried fruit. Store in an airtight container at room temperature for up to 2 weeks.

- Adjust sweetness by using more or less honey/maple syrup.
- Mix and match nuts, seeds, and dried fruits to suit your taste.
- Be careful not to overcrowd the air fryer basket for even crisping.
