Ingredients

Onions

  • 2 medium Vidalia onions (approx. 1 pound total)

Breading Mixture

  • 1 1/2 cups panko breadcrumbs

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

  1. Prepare the Onions: Cut off both ends of the Vidalia onions, then slice into 1/4 inch thick rounds. Carefully separate the slices into individual rings.
  2. Set up Breading Stations: Place all-purpose flour in one bowl and beaten eggs in a second bowl. In a third bowl, combine panko breadcrumbs, grated Parmesan, salt, paprika, onion powder, and garlic powder, mixing evenly.
  3. Coat the Onion Rings: Dip each onion ring into the flour, shaking off any excess. Then dip it fully in the beaten eggs. Allow any extra egg to drip off before transferring the rings to the breadcrumb mixture. Coat thoroughly with the breadcrumb mixture and place the coated rings on a wire rack or baking sheet lined with wax paper. Spray the tops lightly with cooking spray to aid crisping.
  4. Prepare the Air Fryer Basket: Spray the air fryer basket lightly with olive oil using a non-aerosol oil mister to prevent damaging the basket.
  5. Cook the Onion Rings: Working in batches to avoid overcrowding, place the coated onion rings into the air fryer basket. Cook at 375°F (190°C) for 6 to 8 minutes until golden brown and crispy. Remove cooked rings and continue with remaining batches.
