Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 400˚F (200˚C). Grease a 15 inch (38 cm) round pan generously with butter and drizzle with olive oil. Place the pan in the hot oven for about 3 minutes to heat and get the oil sizzling, being careful not to let it smoke.
- Make the batter: In a large bowl, combine all-purpose flour and salt. Mix in 1 beaten egg and the milk to form a thick batter.
- Pour first layer of batter: Pour two-thirds of the batter into the hot pan and use a spatula or the back of a spoon to spread it evenly over the entire bottom.
- Add the feta cheese: Evenly distribute the crumbled Greek feta cheese over the layer of batter in the pan.
- Prepare and pour remaining batter: In a separate bowl, mix the remaining beaten egg with water, then stir this into the remaining one-third of batter. Pour this batter evenly over the feta layer. The batter will not completely cover the cheese, allowing some feta to peek through.
- Add finishing touches: Dot the pie with small pieces of butter and drizzle the top with extra virgin olive oil for flavor and browning.
- Bake the pie: Place the pan on the lower oven rack and bake for about 40 minutes, rotating the pan halfway through baking, until the pie is golden brown and has pulled away slightly from the sides of the pan.
- Serve: Serve the Alevropita hot for a crisp texture or at room temperature to enjoy the flavors fully.
