This comforting baked tortellini with chicken is a delicious dump-and-bake meal that combines tender cheese tortellini, diced cooked chicken, savory broth, frozen mixed vegetables, and creamy Boursin garlic and herb cheese. Topped with a melted Italian cheese blend, it’s an easy, one-dish dinner perfect for busy weeknights.

  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 3 cups diced, cooked chicken
  • 20 ounces fresh cheese tortellini (or 2 x 9-ounce packages)
  • 1 ½ cups low-sodium chicken broth
  • ¼ teaspoon kosher salt
  • 2 cloves garlic, minced
  • 2 cups frozen mixed veggies (peas, green beans, carrots, corn)
  • 1 (5.3-ounce) Boursin garlic and herb cheese
  • 1 cup shredded Italian cheese blend

Instructions

  1. Preheat and Prep: Heat your oven to 400°F (204°C). Grease or spray a 9×14 inch baking dish with cooking spray to prevent sticking.
  2. Combine the Ingredients: In the prepared baking dish, add the diced cooked chicken, fresh cheese tortellini, low-sodium chicken broth, kosher salt, minced garlic, and frozen mixed vegetables. Stir gently to combine everything evenly. Nestle the Boursin garlic and herb cheese into the center of the mixture, but do not stir it in yet.
  3. Cover & Bake: Cover the baking dish tightly with aluminum foil to trap steam and moisture. Bake in the preheated oven for 30 minutes, allowing the tortellini to cook and flavors to meld.
  4. Top with Cheese: Remove the foil and stir the mixture well to fully incorporate the melted Boursin cheese. Evenly sprinkle the shredded Italian cheese blend over the top. Lightly tent the dish again with foil and bake for an additional 5-10 minutes, or until the cheese on top has melted and begun to brown lightly.
  5. Allow to Sit: Take the dish out of the oven and leave it covered loosely with foil for 5-10 minutes. This resting time helps the tortellini absorb more of the sauce for better flavor and texture. Serve warm with the remaining sauce drizzled over each portion.

Notes

  • You can use any cooked chicken you have on hand: rotisserie, grilled, or baked.
  • If Boursin cheese is unavailable, cream cheese mixed with garlic and herbs can be a good substitute.
  • Frozen mixed vegetables can be varied depending on your preference or seasonal availability.
  • Make sure the baking dish is tightly covered with foil to avoid drying out during baking.
  • This recipe can be easily doubled for a larger crowd, using a correspondingly larger baking dish.
